HELPR-1 – Chef

Summary of role
The responsibility of the Chef is to manage the Galley in an efficient and effective manner, ensuring the timely delivery of excellent quality meals to crew and staff (up to 50 when the vessel is at capacity) as per the menu plan, which extends to cost and procedural matters.

Roster
Crew work 3 weeks full time while the vessel is engaged in its missions. They then receive 3.5 days shore leave when the vessel returns to its home port of Port Vila (mid Saturday to Wednesday morning). Crew return to the vessel on a Wednesday morning to prepare the vessel for departure on a Sunday.

Leave entitlements
Marine crew receive leave over the Easter period and are required to take extended leave over the Christmas and New Year period. No other leave is permitted to be taken between these times.

Essential duties and responsibilities
• Be responsible for menu planning that reflects the local cuisine, and sourcing and procuring provisions.
• Ensure that food deliveries are to the highest standard and quantities are confirmed against the order/purchase order and invoice/delivery docket.
• Prepare each day’s menu, with assistance from the Galley Hand.
• Adhere to the published mission menu cycle ensuring all meals are prepared in readiness for mealtimes.
• Apply leadership and teamwork in the galley while working with galley assistants.
• Compliance to all food hygiene regulations and ensuring a safe and clean workplace at all times.

Additional responsibilities
• Required to complete all other duties as directed by the Master, onboard management, and marine management.
• Participation in drills as required by Statutory Regulation and undertake other shipboard/shoreside training as required by the Company.
• Attend crew meetings.
Certificates and qualifications
• Commercial Cookery Qualification (minimum certificate III in Cooking)
• Food Handlers Certificate
• Marine Cook’s Certificate
• First Aid Certificate
• CPR

Food and accommodation
Food is provided free of charge whilst aboard the vessels.
Twin share accommodation is provided, free of charge. Sole use of cabin accommodation is provided free of charge when available.

Per the Navigation Act and the Respond Global Employee Code of Conduct & Disciplinary Procedure, it is the responsibility of all crew to keep crew quarters clean and presentable at all times. All crew and officer’s quarters will be inspected by the Master.

At Respond Global it is a high expectation of all employees, in all instances, to promote the company in a positive manner. A positive culture can only be achieved with the support of the whole team. It is a responsibility of all employees to positively represent the company and foster a favourable attitude amongst crew at all times.
All crew must observe the strict no alcohol/kava/drugs policy while onboard HELPR-1. Failure to do so will result in immediate dismissal from the vessel.
